Ingredients

  • 1 x 150g bar of Dark Chocolate
  • 6 tablespoons Butter
  • 4 Eggs
  • ½ cup Low GI Sugar
  • 1 teaspoon Orange Zest
  • 1 teaspoon Orange Extract

Method

  1. Preheat your oven to 150 C and line a 20cm springform pan with baking paper.
  2. Chop the chocolate into fine chunks and add to a bowl. Then add the butter.
  3. Melt the butter and chocolate in the microwave in 20-second increments, then remove the bowl from the microwave and let the mixture cool to room temperature.
  4. While the mixture is cooling, crack the eggs and place the egg whites into a mixing bowl. Beat at medium-high speed until soft peaks form.
  5. Add the Low GI sugar gradually and keep beating to stiff peaks.
  6. Add the yolks, orange zest and orange extract to the bowl with the chocolate mixture. Whisk to combine.
  7. Add a third of the whipped egg whites to the chocolate mixture and combine. Add the remaining egg whites and gently fold until a consistent mixture forms.
  8. Pour the batter into the prepared springform pan and transfer to the oven. Bake for 40-45 minutes or until an inserted toothpick comes out dry. The cake will rise in the oven and then deflate slightly as it cools.
  9. Let the cake cool completely before removing it from the pan. Garnish with a little icing sugar and orange zest. Enjoy.
