Ingredients
Salad
- 2 pieces of steak
- 1 large cos lettuce chopped
- 500g cherry tomatoes
- 2 medium cucumbers
- 1 mango peeled and sliced thinly
- 1 small red onion sliced thinly
- 2 avocados cubed
- 100g goats cheesed crumbled
Dressing
- 1 bunch of mint chopped
- 1 small bunch of coriander chopped
- 1 red chilli thinly chopped
- 1 garlic clove thinly chopped
- 100ml olive oil
- 1 lime juiced
- 1 lime zest
- 2 tbsp balsamic vinegar
- 2 tbsp Low GI sugar, melted in boiling water
Method
- Chop all dressing ingredients finely and combine ingredients in a medium bowl.
- Season steak and cook on high heat until tender. Rest for 5 minutes before chopping into thin slices.
- Scatter chopped lettuce in a large salad bowl. Add tomatoes, onion, mango, cucumber and toss together. Top salad with steak, avocado and goats cheese.
- Add dressing and serve.
