Ingredients
- 2½ cups plain (all-purpose) flour
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- 1 cup Sunshine Sugar Raw Sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract (optional – adds extra flavour)
- Icing and sprinkles, for decorating
Method
1. Preheat fan oven to 175°C (350°F). Line baking trays with baking paper.
2. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
3. In a large bowl, beat butter and Sunshine Sugar Raw Sugar until pale and creamy (about 2 – 3 minutes).
4. Add egg, vanilla, and almond extract. Mix to combine.
5. Gradually add the dry ingredients, mixing on low speed until a soft dough forms.
6. Divide dough into two equal portions, shape into disks and wrap in cling film. Chill in the fridge for at least 1 hour.
7. Roll one dough disk at a time on a lightly floured surface to 6mm thickness. Use your chosen shaped cutters to cut out cookies and transfer to prepared trays.
8. Bake for 8 – 10 minutes, or until edges are just starting to turn golden. Cool on tray for 5 minutes, then transfer to a wire rack to cool completely.
9. Once cool, decorate with icing and sprinkles as desired.
TIP: Let each icing layer dry before adding details for the best finish.
