Ingredients
Chilli
- 2 x 420gram cans white cannelloni beans or kidney beans & baked beans
- 6 rashers of lean rindless bacon chopped
- 2 tablespoons of oil
- 2 onions
- 2-3 garlic cloves
- 1 x 420 gram can chopped tomatoes
- 1/2 cup of tomato sauce
- 2 tbs Low GI Sugar
- 2 tsp Chilli Powder
- 2 tsp Smokey Paprika
- 1 tsp Ground Cumin
- 1tbsp of Malt Vinegar
- Salt and Pepper
- 2 cups of Beef stock or Vegetable stock
To Serve
- Crusty bread
- Parsley
- Tortilla chips
- Cheese
Method
- Finely chop onions and garlic.
- Dice bacon and add to large saucepan with oil over a medium heat until browned.
- Add onions and garlic and stir for 3-5 minutes.
- Stir in spices, salt and pepper, tomatoes, tomato sauce and Low GI sugar.
- Add vinegar, beans and stock, stir and let simmer for 15-20 minutes.
- Sprinkle with parsley, cheese and tortilla chips and serve with warm crusty bread.
