Ingredients

  • 1 bunch of carrots, peeled and trimmed
  • 1 tbsp Low GI sugar
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp dried thyme

Method

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, mix Low GI sugar, balsamic vinegar, and olive oil.
  3. Toss carrots in the mixture, sprinkle with thyme and place on a baking sheet.
  4. Roast for 20–25 minutes, turning halfway through.
