Ingredients
- 1 bunch of carrots, peeled and trimmed
- 1 tbsp Low GI sugar
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp dried thyme
Method
- Preheat oven to 200°C (400°F).
- In a bowl, mix Low GI sugar, balsamic vinegar, and olive oil.
- Toss carrots in the mixture, sprinkle with thyme and place on a baking sheet.
- Roast for 20–25 minutes, turning halfway through.
