Ingredients

  • 1 ½ cups plain flour
  • ½ cup Low GI sugar
  •  1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  •  ½ cup unsweetened apple sauce
  • ¼ cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup almond milk
  • 1 cup peeled and finely chopped apple (about 1 medium apple)
  • Sliced almonds for topping
  • Fresh berries for topping

Method

  1. Preheat the oven to 175°C. Line a 12-cup muffin tin with muffin liners or lightly grease.
  2. In a large bowl, whisk together the flour, Low GI sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine the apple sauce, oil, vanilla extract, egg, and milk. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the chopped apple.
  6. Divide the batter evenly amongst the muffin cups, filling each to about ¾ full. Add toppings such as oats or nuts if desired.
  7. Bake for 18-22 minutes or until a toothpick inserted in the centre comes out clean.
  8. Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  9. Top with sliced almonds and berries.
