Ingredients
- 1 ½ cups plain flour
- ½ cup Low GI sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsweetened apple sauce
- ¼ cup vegetable oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1 large egg
- ½ cup almond milk
- 1 cup peeled and finely chopped apple (about 1 medium apple)
- Sliced almonds for topping
- Fresh berries for topping
Method
- Preheat the oven to 175°C. Line a 12-cup muffin tin with muffin liners or lightly grease.
- In a large bowl, whisk together the flour, Low GI sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, combine the apple sauce, oil, vanilla extract, egg, and milk. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the chopped apple.
- Divide the batter evenly amongst the muffin cups, filling each to about ¾ full. Add toppings such as oats or nuts if desired.
- Bake for 18-22 minutes or until a toothpick inserted in the centre comes out clean.
- Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Top with sliced almonds and berries.
