Ingredients

Dough

  • 1 ¼ cup milk
  • 60g butter
  • 4 cup bread flour
  • ½ cup caster sugar
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 21g instant yeast
  • ½ tsp baking powder
  • ½ tsp bicarb soda
  • 1 lemon, rind finely grated
  • 1 cup sultanas and raisins
  • 2 eggs
  • 1 tsp vanilla extract

Flour Paste

  • ½ cup plain flour
  • 4 tbs water

Glaze

  • ¼ cup golden syrup
  • ¼ cup boiling water

Method

  1. Preheat oven to 180°C and lightly grease an oven tray.
  2. Place milk and butter in a saucepan over gentle heat and stir until butter has melted. Set aside until lukewarm.
  3. Combine flour, yeast, sugar, spices, baking powder, bicarbonate of soda, lemon rind, and dried fruit in a mixing bowl.
  4. Lightly whisk eggs and vanilla together and then add to the bowl with the dry ingredients.
  5. Using a wooden spoon, gently stir in the milk and butter mixture until the dough comes together.
  6. Place dough on a clean surface and knead for 10 minutes.
  7. Place dough in a lightly oiled bowl, cover with plastic and place in a warm spot for 1½ hours or until it has doubled in size.
  8. Place the risen dough onto a clean surface again knead it again until back to its original size.
  9. Form 12 evenly shaped buns and place them onto the prepared tray. Loosely cover with plastic, leaving enough room for the buns to rise. Allow 30 minutes for them to rise again.
  10. To make Flour Paste, mix flour and water together to form a smooth paste and spoon in a piping bag. Pipe a cross on top of each risen bun, then bake for 15 minutes or until golden.
  11. For the Glaze, mix 1/4 cup golden syrup with boiling water. Brush over the tops of the buns.
  12. Serve while warm with your favourite toppings.
