Ingredients
- 1 cup dark chocolate chips
- 85g butter, cubed
- ½ tsp. salt
- ¾ cup Sunshine Low GI sugar
- 1 tsp. vanilla extract
- 2 eggs
- 2/3 cup almond flour or meal
- 1/3 cup rice flour
Method
- Preheat oven to 180°C with rack in lower section of oven.
- Grease and line brownie/slice tray, covering the bottom and sides with baking paper.
- Place chocolate, butter and salt in a heatproof bowl over simmering water, stirring occasionally until chocolate has melted and the mixture is smooth.
- Allow chocolate mixture to cool for a few minutes.
- Stir in salt, vanilla and Low GI sugar.
- Add eggs and stir to combine well.
- Add almond and rice flour and mix thoroughly.
- Pour batter into the pan and spread evenly.
- Bake for 20-25 minutes or until brownies are slightly puffed all over and a toothpick can be inserted into the centre and removed clean but moist.
- Allow to cool in pan.
- Remove from pan, cut into portions and enjoy!
