Ingredients

  • 1 cup dark chocolate chips
  • 85g butter, cubed
  • ½ tsp. salt
  • ¾ cup Sunshine Low GI sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2/3 cup almond flour or meal
  • 1/3 cup rice flour

Method

  1. Preheat oven to 180°C with rack in lower section of oven.
  2. Grease and line brownie/slice tray, covering the bottom and sides with baking paper.
  3. Place chocolate, butter and salt in a heatproof bowl over simmering water, stirring occasionally until chocolate has melted and the mixture is smooth.
  4. Allow chocolate mixture to cool for a few minutes.
  5. Stir in salt, vanilla and Low GI sugar.
  6. Add eggs and stir to combine well.
  7. Add almond and rice flour and mix thoroughly.
  8. Pour batter into the pan and spread evenly.
  9. Bake for 20-25 minutes or until brownies are slightly puffed all over and a toothpick can be inserted into the centre and removed clean but moist.
  10. Allow to cool in pan.
  11. Remove from pan, cut into portions and enjoy!
