Ingredients

  • 4 cups bite-sized juicy fresh fruit, for example, berries, grapes, peaches, plums, or pears
  • 1/4 cup plus 2 tablespoons Low GI sugar
  • 1 1/2 cups crème fraiche

Method

  1. In a medium bowl, combine the fruit and 1/4 cup of the sugar. Set aside, stirring occasionally, until the fruit has softened and the mixture is syrupy (approximately 1 hour).
  2. Whip the crème fraiche until stiff peaks form.
  3. Spoon half of the fruit into 4 serving glasses or bowls (parfait glasses, wine glasses, or cocktail glasses are ideal).
  4. Top with half of the whipped crème fraiche and 1 tablespoon of the remaining sugar. Serve and enjoy.
