Easter is synonymous with colourful chocolate eggs, family gatherings and, of course, all things sweet. Alongside the Easter bunny and egg hunts, it’s the perfect time to spend a little extra time in the kitchen baking something special. This joyful holiday is also a great excuse to try a fun new sweet treat recipe like these colourful Easter Smartie Cookies that bring a little extra sweetness to the celebration.
Ingredients
- 225g plain flour
- 150g butter
- 75g Low GI Sugar
- Smarties (for decorating)
Method
- Preheat the oven to 190°C.
- Place the flour, butter and sugar in a bowl.
- Rub the butter into the dry ingredients until a dough forms. This should take a few minutes.
- Take some of the dough and roll into five small balls.
- Place the balls on a lined baking tray in the shape of a flower and gently press them down.
- Add a Smartie to the centre.
- Place the cookies in the freezer for 30 minutes or the fridge for at least 1 hour.
- Bake for 8–10 minutes.
