Easter is synonymous with colourful chocolate eggs, family gatherings and, of course, all things sweet. Alongside the Easter bunny and egg hunts, it’s the perfect time to spend a little extra time in the kitchen baking something special. This joyful holiday is also a great excuse to try a fun new sweet treat recipe like these colourful Easter Smartie Cookies that bring a little extra sweetness to the celebration.

Ingredients

  •  225g plain flour
  • 150g butter
  • 75g Low GI Sugar
  • Smarties (for decorating)

Method

  1. Preheat the oven to 190°C.
  2. Place the flour, butter and sugar in a bowl.
  3. Rub the butter into the dry ingredients until a dough forms. This should take a few minutes.
  4. Take some of the dough and roll into five small balls.
  5. Place the balls on a lined baking tray in the shape of a flower and gently press them down.
  6. Add a Smartie to the centre.
  7. Place the cookies in the freezer for 30 minutes or the fridge for at least 1 hour.
  8. Bake for 8–10 minutes.
