Ingredients

  • 1 ¾ cups plain flour
  • ½ tsp baking powder
  • ½ tsp cinnamon (optional)
  • ½ cup unsalted butter, softened
  • ½ cup Sunshine Low GI Sugar
  • 1 egg
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. In a bowl, mix flour, baking powder, and cinnamon.
  3. In another bowl, beat butter and Low GI Sugar until fluffy.
  4. Add egg and vanilla.
  5. Gradually mix in dry ingredients until a dough forms. Chill for 30 mins.
  6. Roll out dough and cut into bunny shapes. Place on tray.
  7. Bake for 10-12 mins until golden.
  8. Let cool, then decorate with icing or melted dark chocolate.
