Ingredients
- 1 ¾ cups plain flour
- ½ tsp baking powder
- ½ tsp cinnamon (optional)
- ½ cup unsalted butter, softened
- ½ cup Sunshine Low GI Sugar
- 1 egg
- 1 tsp vanilla extract
Method
- Preheat oven to 180°C and line a baking tray with parchment paper.
- In a bowl, mix flour, baking powder, and cinnamon.
- In another bowl, beat butter and Low GI Sugar until fluffy.
- Add egg and vanilla.
- Gradually mix in dry ingredients until a dough forms. Chill for 30 mins.
- Roll out dough and cut into bunny shapes. Place on tray.
- Bake for 10-12 mins until golden.
- Let cool, then decorate with icing or melted dark chocolate.
