Valentine’s Day is synonymous with love, the colour red, and, of course, all things sweet. Besides being a special occasion where we get to really show how much we care about someone, this heart-filled day is also a great excuse to try out a new Low GI sweet treat recipe.
Ingredients
- ½ cup unsalted butter, melted (1 stick)
- 1 cup Sunshine Low GI sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup plain flour
- ¼ teaspoon salt, optional
- ¾ cup chocolate chips (white, milk or dark)
- 1 cup cherries, fresh or frozen (or use a combination of raspberries, blueberries, strawberries)
Method
- Preheat oven to 180 C. Line a 20cm x 20cm pan with aluminium foil, spray with cooking spray; set aside.
- In a medium microwave-safe bowl, melt the butter, about 60 seconds.
- To the melted butter, add the Low GI sugar and stir to combine.
- Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix.
- Fold in chocolate chips, fruit and pour batter into prepared pan, smoothing it lightly.
- Bake for 25 to 30 minutes, or until edges begin to slightly pull away from sides of pan and centre is set.
- Allow to cool for at least 1 hour before slicing and serving.
